Broccoli Scalloped Potatoes

2 Tbls. chopped onion
4 garlic cloves, minced
1/4 cup butter, cubed
5 Tbls. all-purpose flour
1/4 tsp. white pepper
1/8 tsp. salt
2 & 1/2 cups milk
2 cups (8 oz) shredded swiss cheese, divided
2 lbs medium potatoes, peeled & thinly sliced
2 cups julienned fully cooked ham
2 cups frozen broccoli florets, thawed & patted dry

In a large skillet, saute onion & garlic in butter for 3-4 minutes or until crisp-tender. Stir in the flour, pepper and salt until blended. Gradually stir in milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Stir in one cup of cheese. Reduce heat, cook for 1-2 minutes or until cheese is melted. Sauce will be thick. Remove from the heat, gently stir in the potatoes, ham, and broccoli. Transfer to a greased 9x13 inch baking dish. Sprinkle w/remaining cheese. Bake uncovered 20-25 minutes longer or until potatoes are tender and cheese is melted.

Spinach Salad

Salad:

2 bunches fresh spinach
1 small head lettuce
1 purple onion, cut in rings
3/4 lb. bacon, crumbled
3/4 lb. swiss cheese, cubed
1 c. cottage cheese
1 c. craisins

Dressing:
3/4 tsp. poppy seed
1/3 c. white vinegar
3/4 c. oil
1/3 c. sugar
3/4 Tbs. grated onion
3/4 tsp. salt
1/3 tsp. mustard

Mix in blender. Toss w/salad just before serving.

Chicken & Stuffing

4 boneless, skinless, chicken breast halves
4 slices swiss cheese
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup chicken broth
1/4 cup milk
2 to 3 cups stuffing (I use one box/bag of stove top stuffing)
1/4 - 1/2 cup melted butter
salt & pepper to taste

Season chicken w/salt and pepper. Place in crock pot. Pour chicken broth over chicken. Place cheese slices on chicken. Combine milk w/soups, pour over chicken. Sprinkle stuffing mix overall. Drizzle w/melted butter. Cook in slow cooker on low heat for 4-6 hours.

Pastrami Sandwiches

1/2 lb pastrami - deli slices
1/2 lb swiss cheese
1 can pineapple tidbits
1 cont./cup mushrooms, sliced
hogie rolls

Brown pastrami & mushrooms, add pineapple. Lay cheese on top and cover pan until cheese melts. Toast buns, then lay met mixture on top.

Chicken Cordon Bleu

8 skinless boneless chicken breasts
8 slices ham
8 slices swiss cheese
1 stick butter, melted
1 pks seasoned croutons (I use bread crumbs)
2 cups parmesan cheese
1 can cream of chicken or mushroom soup
1 pt sour cream

Crush croutons and mix in large ziplock with parmesan cheese. Dip chicken in butter then shake in bag of croutons and cheese. Lay cheese and ham on chicken breast and roll, then arrange in 9x13 baking pan. Combine sour cream and soup and pour over chicken breasts. Bake at 350 for 1 hour 15 minutes.
